icebox delights!

I'm not sure I should admit to this entry. Oh, what the heck...

I'm royally hooked on inventing individual icebox pudding pies. What started with the Banana Pudding Parfaits last week bloomed into a full-fledged addiction! I can't believe how endless the possibilities are. I lost interest in the first 5 minutes of watching a movie the other night and instead came up with an idea for Icebox Banoffee Pie. This is so seriously good! And the best thing is, you don't need a recipe, you just need to assemble layers as you see fit. Here is how to make it:

Icebox Banoffee Pie

Dissolve a teaspoon of instant espresso powder with a 2 tablespoons of recently boiled water. Add 3 tablespoons of dark rum. Add rum & espresso mixture to Banana Creme Pudding cup to taste. Add by teaspoonful rum & espresso mixture to Cool Whip to taste.

Layer Cool Whip
Layer Graham Crackers with Dolce de Leche spread on one side
Layer flavoured Banana Cream pudding
Layer Banana Slices
Layer Cool Whip (straight from the tub - not flavoured)
Layer Graham Crackers with Dolce de Leche spread on one side
Layer rest of flavoured Banana Cream pudding
Layer Banana Slices
Final layer flavoured Cool Whip
Garnish with a Banana Chip

I was making Owen a batch of apple sauce Saturday evening when it dawned on me that any left over apple sauce could be used in another icebox dessert. I then came up with Icebox Toffee Apple Pie A La Mode!

Icebox Toffee Apple Pie A La Mode

Blend:
Crumble 1 Nilla Wafer
3 tbsp Quick-Cook Oats
Spoonful of Skor Bits
(mostly) Cinnamon, (pinch of) Nutmeg & (dash) Allspice

Layer Cool Whip
Layer Crumble Blend
Layer Toffee Carmel Pudding
Layer Apple Sauce
Layer Cool Whip
Layer Crumble Blend
Layer rest of Toffee Carmel Pudding
Layer Apple Sauce
Layer Cool Whip
Top with a sprinkle of Cinnamon

Icebox Coconut Cream Pie

Crumble a couple of graham crackers
Blend a couple teaspoons of Malibu Rum into one Vanilla Snack Pack

Layer Cool Whip
Layer Graham Cracker Crumbles
Layer Malibu Vanilla Pudding
Layer Sweetened Feather Flake Coconut
Layer Cool Whip
Layer Graham Cracker Crumbles
Layer rest of Malibu Vanilla Pudding
Layer Sweetened Feather Flake Coconut
Layer Cool Whip
Top with Toasted Coconut

Yeah, so the pudding element to these desserts are SNACK PACKS! I'd always heard of Snack Packs but never knew what they were. But since finding them on sale last week they have really worked out for these desserts. I like how inexpensive they are, that they don't require refrigeration and set up super-quick so in 10 minutes you can dive into your dessert! All you need to do is build these desserts on things you have lying around the house.
